Roushta (Lentils with Pasta)

This is a traditional lebanese recipe. Great if you have few ingredients. Perfect for lunchshare.


Here are the lentils used.


Serves 4

  • 250g green lentils
  • 1.5 litres boiling water
  • pasta dried or fresh 3 hand fulls.
  • Salt
  • 70ml Good Olive Oil
  • 1 Large Onion Chopped
  • 4 Cloves Garlic
  • 40g Chopped Coriander or Parsley
  • pack of asparagus


Cook lentils for 40 Minutes in saucepan.

Cook Pasta for 10 minutes in saucepan, with asparagus pieces.

Wait until lentils have cooked. Heat 2/3 of the oil, add onion(s), and crushed garlic. Fry until transparent.

Drain the lentills, add put back in same saucepan.

Add frying pan content to the drained lentils.

Drain Pasta and Asparagus

Add Pasta and Aspargus to lentills.

Mix up gently. Add a little coriander after cooking and mixing has finished.

Side Dish (1/3 of lunchshare tray)

Chickpeas with lemon, garlic and cumin dressing.

Also added a pickled Sweet Chilli Pepper filled with cream cheese, just for fun.
